Muesli Bran Muffins

Ingredients

2 cups All-Purpose flour (500 mL)

1-1/2 cups raisins (375 mL)

1 cup muesli (250 mL)

1 cup natural bran

1 cup packed brown sugar

2 teaspoons baking soda

1/2 teaspoon salt (2 mL)

1 cup plain yogurt

1 cup milk

2/3 cup vegetable oil

1/4 cup fancy molasses

2 tablespoons rolled oats

Directions

In large bowl, mix together flour, raisins, muesli, bran, sugar, soda and salt. In separate bowl, whisk together yogurt, milk, oil and molasses. Stir into dry ingredients just until moistened.

Spoon batter into large greased or paper-lined muffin cups, filling to top. Sprinkle with rolled oats. Bake in 400° F ( 200° C) oven for 20 minutes or just until firm to touch. Makes about 15 muffins.
